What did you cook or eat today (January 2025)

Decided to make an egg curry today and finish off the leftovers from the other day, but wife came into the kitchen and said "why don't you make that sweetcorn (bhutta) dish as well? "
So I did.
Basmati rice, egg curry, bhutta:

Repeat of last night copycat chicken Chipotle bowls: brown basmati cilantro lime rice, pinto beans, adobo marinated grilled chicken, sour cream, shredded cheese, fresh tomato salsa with hint of lime tortilla chips (not pictured) for scooping. Very tasty. I took a few photos:

I did use parchment paper and they did not stick. But that wasn't the issue, it was more about them being heavier and denser than I'd like. And it could be that my dough was too wet. I am going to try a different person's recipe tomorrow and see if I have better results. I will still use parchment paper next time as well, though.

I was asking really because I’ve been thinking about making baguettes for a sometime.
I miss big cheese coated croutons and there’s no GF (gluten free) baguette alternative that’s worth a fig.
For soup I slice GF croissants and that’s not bad but I’d love a baguette so have been eyeballing pans for quite a while.

GF dough is very wet, it’s actually thick batter so I while I think I’d prefer the perforated pan I know it wouldn’t go well without parchment.
Any thoughts on the pans?

Can you post your recipe for bhutta please? Sounded and looks interesting, but yours looks a lot different from recipes I found on line.
 
Red Ranger Pie

I had the tumble down bits from the edge of the dish so not looking it’s best.
Having it again on Sunday because I made two so I’ll try and do a better job then! 📸

Essentially it’s a Chicken and Leek pie but flavoured with curry spices and Chinese five spice.
I top it with crumble hash browns with a Chinese glaze dusted into it.

It was a happy accident when I got my new oven about two years or so ago.
As the oven is red my son thought it’s first dish should be red, I agreed but had a lot of chicken and leeks to use up so I made good with what I had to colour it with and everyone loves Red Ranger Pie 😂
