What did you cook or eat today (January 2025)

Roast chicken again:

This is my third of three popular roast chicken recipes; Ina Garten’s Engagement Chicken, Darren McGrady’s roast chicken, and Jacques Pepin’s roast chicken.

Obviously, I liked this one quite a bit, as I took three pics in poor light, and it’s my favorite. No surprises, it’s Pepin’s.

I call it flippy chicken, because he starts it on one side, then flips it over partway through, and finally finishes it on its back.

Overall, Pepin’s, then McGrady’s (who gets extra points for being the easiest one), and lastly, poor Ina - her chicken is fine, but it’s more work for very little return over the others.

Now that I’ve figured that out, I probably won’t roast another chicken for 10 years. :laugh:

But you haven’t done steamed, deep fried or pressure cooked yet! 😂

Ah, but there is stuffing the chicken and also shoving butter under the skin...
 
I’m sure it’s fine, I just don’t ever see me buying a pressure cooker. Never had one, don’t know that I want one.
I don't own one either. I guess if I was short on time like I was when working and the kids were young...but for some reason I didn't have one then, either. Maybe because I'm a slow and methodical person.
 
We inherited our pressure cooker from Craig's brother when he passed as no one wanted it because they were afraid if it. Have to admit it sat unused for a few years because I was afraid of it due to seeing the results of an overloaded/blocked valve pressure cooker accident in my youth. My mother used to use one for lots of things until she saw the results of the aforementioned accident, then she tossed hers. I started using it because Craig complained of tough beans cooked from dried, and about how long it took to cook collard greens, as he likes them cooked to nearly mush. I'm still very careful about using it, but it does come in handy.
 
Devilled eggs.

Lasagne and Cubed roasted potatoes. No pic of the lasagne, I forgot!

I plonked the egg white halves in the marinade overnight to get more of an overall coating.
Made 24 halves, mistakenly told Mr SSOAP to help himself. came back in the room to him saying "I can't stop eating these."
Managed to save four each for the boys 😆
