What did you cook or eat today (January 2025)

I found all the necessary ingredients to make meatloaf, so I did, but I "Pugglized" it. Sautéed mushrooms and onions with medium cheddar I cubed up and put in there and I wrapped it in bacon with a sweet glaze on top. Paired with fluffy, soft, amazing homemade Sourdough bread rolls with a honey butter glaze on top.

I put cheddar, ketchup , brown mustard, and mushrooms in my meatloaf also. I use oats instead of bread.
 
I just put a huge bowl of lasagne in the oven. Homemade sheets.
Just with a bit of a difference. First layer is eggplant.
Not traditional at all as it contains chili's, soy and even yoghurt as well :)

Interesting. I love a bit of layered pasta. Aubergine though is a different story 😂
 
Just something quick and simple today, a couple of lamb chops, mushrooms cooked in butter and garlic along with some cheesy leeks!

I made my OH a mashed potato pancake with melted cheese on top and two over-medium fried eggs with a side of bacon. I had a blueberry muffin.

I dunno yet about dinner. It's only 6PM here and we normally eat somewhere between 10:30 and midnight(ish). I am thinking burgers but I need to make some fresh buns because the ones I made the other day are a little too dense now (great for French toast or squirrel food). If my starter (fed earlier) wakes up between now and 7:30 I will make burger buns (with a little added commercial yeast if needed) and if not I will make them for tomorrow night--and it will be leftover copycat Chipotle chicken bowls for tonight, which for some reason we never get tired of eating.
