Sweet potato kibbeh.

Lunch yesterday and for the challenge.
Filling is couscous, black olives and fresh sweet red pepper chopped. Kid did the chopping.👍

Delicious with mayo and green olives paste and wrapped in lettuce.

Will post the recipe today.

I made tostadas last night. I used pan seared adobo seasoned chicken, caramelized onion, caramelized red and yellow bell and jalapeño peppers, refried beans with crumbled bacon mixed in, sour cream, shredded cheddar cheese, and fresh tomatoes and lettuce from the garden. It was very yummy.

Well, it's a Heinz product, so that's bad, but it's from the UK, which automatically means it's posh to us Americans, so it's a bit of an identity crisis:
