Last night I made fish tacos. Flounder. Fried. Some coleslaw to top. A skillet heated flour shell. Haven’t made them in a long time. These were delicious. Tonight chicken breast stuffed with goat cheese and basil. Breaded in kanji breadcrumbs. Fried green beans as a side.

Day Three of our Stay-cation:

Took my Mother to this tiny whole in the wall American-Italian joint that we hadn't been to in six years. DH & I had given up on them when the last time that we went it was horrid, but I had been hearing about of chatter on Social Media about much better they were so ...

Leftover spicy pasta bake. Always useful on hospital visit days to have pre cooked something.

A late afternoon doctors appointment meant that evening meal was a quick grab it off the shelf meal...

The vegan pesto (shop bought didn't seem to have much oil in it on this occasion).

Pasta, pesto and tempeh.

Soup weather!

Desk lunch - Miso, shredded veg, shredded leftover chicken, lemon, avo, boiled egg & chilli oil.

Pumpkin soup with nuggets of blue cheese in the bottom of the bowl & topped with chopped nuts

Followed up with mudcake cake offcuts, salted dulche de leche & peanut butter butter cream icing as my friend is making a decorated cake for a colleagues 70th.
