Boring salad at the office. At least it’s healthy. Went out with friends for dinner last night, first time since the pandemic, and partied a little too hard - I spent most of yesterday sleeping off my hangover.

Cooked a lot of food on Sunday amidst helping my daughter with her move home plus I hiked for a couple of hours with a friend.

Made 6L of ham, bean & veg soup which will do lunches for my lot & some is stashed in the freezer. This simmered while I was out hiking.

3.5L of beef kofta massaman curry. Froze 2 x 1L and the rest was for last nights evening meal. With potato. (Monday) This was a fun cook. Had both my adult kids helping. She rolled the tiny kofta & he cooked them while I focused on getting the curry sauce together. Once we had everything in the pot my son set a timer for it to simmer for an hour & my daughter & I left to get more stuff.

Also a beef biryani which was Sunday night’s evening meal. There was some rice left so I’ll flip that into a new meal for this evening.

It’s basically just rice, chickpeas, and raw veggies - nothing too special. Or maybe I’m just getting bored of it because I had the same thing twice last week!
Boring salad for me is iceberg lettuce, tomato, cucumber, green capsicum & onion.

The bog standard offering at the BBQ’s of my childhood. Usually with canned beetroot, corn kernels & asparagus to the side of it in their own dishes and salad dressing was pretty fancy.

My inlaws still serve it up. They find my dresses rocket salads with cheese & fruits etc pretty wild.
