Business trip to Philippines. Our man in Manila brought us to a highly rated modern Filipino restaurant. It was amazing - I hope I can remember the names correctly:

Sinigang - sort of vinegary soup with pork, tomato:

Oxtail Kare-kare - it has a peanut-y kind of taste and there is a prawn paste condiment you eat it with. It contains tripe:

Sisig - fried pig face/ears. One of my favorites which I've had before, but I think this is the best I've ever eaten:

Squid ink fried rice:

Chicken and pork adobo - which I think is a soy sauce and vinegar kind of gravy:

Some large deep fried prawns:

Finally, crispy pata, which is a deep fried pork knuckle. Very unctuous and the lean parts were super tender.

This arrived at the end by which time we had forgotten we had ordered it and were already full, but we still managed to eat half of it!

In case you were wondering, there were 6 of us eating this lot. There was lots of white rice for all those rich flavours to go with as well.

DH & I had to make our annual trek back down to Southern Arizona to see my Doctor (can't find one here in Cowboyville).
I am very well maintained and only need to see her once a year, but I won't give her up... a good, I mean GOOD MD is very difficult to come by here (and in other places as I understand).
Because it's such a long drive, one way, we spend the night.
I did get to go shopping while down there, which also, we do not have here in Northern AZ, and then went to dinner at a wonderful, new, Chinese restaurant right next door to our favorite hotel ... win-win!

Pork with Snow Peas and Beef with Broccoli, there's two quite large bowls of steamed White Rice on the side ... we only ate half, so the other half is this evenings meal.

OH!!
I forgot!
While shopping we had dessert for lunch ...

Coconut Gelato, our favorite.
Voted The Best Gelato In America ... I miss this place! Wish they'd come to Cowboyville 🥺

Sinigang is one of my sons & I favourite. I buy the Knorr instant packets and just add veg & chicken or fish or prawns. The dominant sour is tamarind.

I'm making this for Mom!!!
<edit: I had to create a new category in my CMT account "For Mom" recipes >

You can make them other colours. Blue and yellow as well as the red, for example. Here are some blue ones I made. No artificial food colouring involved.
