We were supposed to be going to an Ethiopian place tonight as I’m curious to try injera but my friend is awaiting results of a PCR.

So I’ll find something in Eastwood.

Injera is curious. Best eaten with other Ethiopian food. I guess it's similar to trying a flatbread made from wheat for the first time or a fermented rice pancake (forgotten what they are called), an Indian pancake. Again best served with the food it's normally eaten with and not tried alone...

My friend has been making dora wat and wanted to make injera. I suggested we try it first.

I had a slow carb lunch. Miso dissolved in boiled water. A big hand full of shredded veg (straight from a bag but I add spring onion & coriander) with a defrosted salmon portion cut into chunks. Nuke 3 minutes. Add chilli oil.

Tonight instead of Ethiopian I ended up going to a local Chinese place that another friend has been banging on about for ages. The menu is crazy and double sided

It was very good. I’m going back ASAP. I got a takeaway beef brisket rice noodle soup for my flatmate and she said it was delicious.

Wise move. I've done both over the years. Now we just tend to buy it when the international food festival is on in Canberra. There is a vegetarian/vegan Ethiopian stand.

The large pack is $20 plus postage... I got 2 crops from it last time, only stopped because this is a warm weather variety and last year after the house fire my house (ironically) wasn't warm enough to continue cropping... i grow them above the fireplace so they stay warm (needs +22°C constantly, so i can only grow them in mid winter and mid summer! )...

I made a burger in the air fryer. It was a little dry, which may have been the air fryer, or the mix of 92% lean beef and 93% lean turkey.
It's the mix of the lean beef/turkey IMO. That's a super lean ratio and would be dry with no oil no matter how you cooked it. I have never made a burger in the air fryer, I like the sear on the cast iron skillet better.

I personally don't like sweet potatoes, but I know that they are super nutritious and in my mind, the nutritional benefits would make for good food thoughts, not bad food thoughts (if you like the taste, which most people do).

It's another one, like those scrambled eggs this morning, that would have been faster and better on the outside grill. I do also blame the dryness on the meat mix, but I'm thinking that air fryer didn't help much. :laugh:

Neither do I. They're something that makes me think there must be something wrong with me, because so many people love them, and I just..meh. I've made two things in my life with sweet potatoes that I actually liked: sweet potato pancakes and sweet potato biscuits. Everything else, I more or less suffer through.

Super nutritious? There is a lot of hype about that IMHO. They aren't so different from potatoes in terms of nutrition. Sweet potato and potato vary a bit in the nutrients from each other but both are 'nutritious'. They have similar calorific value.

My personal opinion, with all due respect :happy: - NEVER make a burger in an air fryer. Burgers need fat and (preferably) grills, although I´d be ok making a burger in a frying pan - with oil in it.:laugh:
Secondly, a burger needs FAT in the meat; at least 20%, and preferably more. That´s where the flavour comes from. A lot of the fat leaches out, but it´s still there for the flavour when it´s cooking. I once asked a chef mate, who cooks meat, meat, meat and meat, what his ideal burger was made of. He said: fresh minced meat, with all the fat, salt and pepper!
Thirdly, turkey is probably the least fatty meat in existence and is prone to drying out in about 3 seconds. Avoid like the plague.
Fourthly, a burger is an institution. It´s glorious minced beef, with no additional flavouring necessary because you dump that on top when you serve it. It´s an American (and probably, international) icon! Don´t mess with it!! Bring on the fat!! Bring on the taste! Exceed your calorie count for at least one day, but enjoy it ! Comfort food is never low fat - it´s just not on the menu:eek::D:D:D
Make yourself a proper, fatty burger tomorrow, on the grill. Saturday, you can beat yourself up and have a green vegetable salad with Kroger´s Lite Mayo.
