Super nutritious? There is a lot of hype about that IMHO. They aren't so different from potatoes in terms of nutrition. Sweet potato and potato vary a bit in the nutrients from each other but both are 'nutritious'. They have similar calorific value.

I personally don't like sweet potatoes, but I know that they are super nutritious and in my mind, the nutritional benefits would make for good food thoughts, not bad food thoughts (if you like the taste, which most people do).

I try to steer clear of pasta, rice, potato during the week. Not always possible. And I steer clear of the deep fried deliciousness as much as possible.

I’m overweight & trying not to compound the problem.

There’s some evidence that whole roasted sweet potato cooked on low temps converts some of the starch to something else that’s better for us.

I can’t remember all the details. Probably something to do with resistant starches.
 
DH & I took Mr&Mrs Next-Door-Neighbor out to linner (late lunch/early dinner) at a lovely new-ish restaurant in our area, three towns up.
It was as a thank you for being care-keepers of our home while it was being renovated (new baseboards, paint both inside & out). We stayed at hotels while it was being done, in said three towns up from here.
They were opening up the house early in the morning for the worker-bees, locking up at the end of the day and surveying the work being done and sending us photos. Coming back and forth twice a day that distance would have killed our gasoline/petrol budget. They were life-savers!

We were all so full, but DH wanted something sweet.
We ordered a Cannoli and shared.
Mr. NDN had never had this before and loved it!
"What is this again? And can you make this?"

And fried Eggs in a hotel breakfast buffet, I'm impressed!!

It said 'pork meatloaf' on the sign - it wasn't Spam - but I think you know that's pretty popular in the Philippines. :)

Yes - fried eggs - they have an egg station where they'll do pretty much any style of egg on request. My usual is 'two fried eggs sunny side up please!'
 
Finally got around at having a crack at making the famous Peruvian Ceviche with leche de tigre. With apologies to karadekoolaid , I didn't follow your recipe (as good as your winning recipe looked) exactly. But after watching countless Peruvians (mostly chef looking types) making their version on YouTube came up with this one, which I guess is a bit of an amalgamation. I'll probably find out quick enough via the YouTube comment section if I strayed too far from being authentic. But I can report it tasted delicious, and I loved the crispy sweet potato chips to go with the dish, as well as the vodka laden leche de tigre shots.

More medical appointments meant another meal out.



Hubby had the fritters, they have feta in them. I had an excellent tofu steak stir fry.
 
This virus is interfering with my eating routine. On Tuesday I had carry oot noodles which I could taste; on Wednesday I had nothing; on Thursday I had a hassleback potato which I could hardly taste and today I'm preparing Scotch broth with a bread stick.
