What did you cook or eat today (June 2023)?

Playing catchup again

Finally harvested the squashes from the garden, but holding the biggest one by its stalk was a mistake. The stalk broke off and the squash split in to 2, so decision made. A lot of squash, sweet potato and corn soup was made. Half went into a double batch of the soup, and the other half was baked and used as croutons.

I'm not certain yet was to what I'll be doing with the other 4.
 
Lunch was eaten out on Saturday due to necessity. There's not a huge choice (for vegans) at the food court in the supermarket shopping hall given that I don't like subway and vegan burgers, so it was the sushi & nori stall again, and the donut booth with a request for less sugar than normal!

Thanks for the compliment ! I thought it looked better than most plates I make, but not that good lol :hug:
I think that it's quite pretty. I might try to make something similar soon. I wish I had some tobiko, that would be fun. That and maybe some slivered nori and scallions...you've got my brain cooking!
 
And I cooked tonight.

No I didn't manage to eat it all. The veg was baked because the oven was on to cook the leek & mushroom "gratin". It's just a basic breadcrumb, olive oil and parsley topping nowadays, but I nailed the sauce. Hubby said it was the best version I've made since we had to rule dairy out of the diet 15 years ago.

So it was served with baked red peppers and baked cauliflower, plus some honey soy tofu for protein.
