What did you cook or eat today (March 2025)

I made a big 4-egg omelet for DH and I to share. I had breakfast today early as it was only shortly after 1pm!

I sauteed some mushrooms in butter and threw in some fried potato pancake pieces and cut up some already cooked bacon (I tend to bake it 1-2 pounds at a time and keep it in the frige in ziplocks). I had some leftovers from the prosciutto wrapped asparagus the other night (that also had bell peppers, shallot, tomatoes, goat cheese, and buffalo mozz, though there wasn't that much cheese left) so I chopped that up and added it to the mix. I also used a little gouda, edam, American, and cheddar cheeses. It was really good!
 
Any further away from the definition of French fries and I think I'd have gone "where?"!

Not a Dr so no patience and no way will I ever buy one of those "make them perfect" cut potato things. 👍
Besides, they’re all “french fries” over here, as a general term, with each type being a specification:

“You want french fries with that?”
“What kind of fries is it?”
“Potato wedges.”
“Sure.”
“Ok, one bacon-cheeseburger and fries…got it!”

Keeps things simple. :wink:

We were talking about fake sushi on another thread and it made me hungry for sushi, so I had some California (fake crab) hand rolls for lunch (around 4:30pm). I used surimi strips, cucumber spears, green onion from the garden, with sriracha mayonnaise and wrapped in nori. Yum!
 
Didn't eat until almost 2 today since we got a late start on errands. We both had a whole rack of baby back ribs, with different sides. Craig had baked beans and slaw. I had baked potato and corn. The ribs come with Texas toast. I had eaten a couple of ribs before I thought to take a picture. Half of my meal came home. Half of Craig's ribs came home.

We are having Chipotle copycat chicken bowls tonight (adobo seasoned chicken, brown basmati cilantro lime rice, cumin and bay leaf seasoned pinto beans, fresh tomato salsa, sour cream, Moneterey Jack cheese, and cilantro lime chips for dipping). I just trimmed off all the skin from the chicken thighs and got the thighs in the slow cooker and the chicken skin is in the toaster oven baking into crispy chicken chicharrones, yummmm. Getting ready to make the pinto beans...we won't eat until after 10pm most likely.

Edit: I ate all of those chicharrones. I mean, granted, when they cooked down, there wasn't that much left in weight. Those things are so good! I drained off the fat into a container and put it in the frige. Eggs cooked in chicken fat are yummy! The biggest bonus when cooking chicken thighs in the crockpot without their skin on is that there isn't a fatty pool of liquid in the pot. The thigh meat still has enough fat to keep the meat from drying out, though.
