I made up a batch of my Copycat Trader Joe's Curried Chicken Salad and needed a taste, ya know, quality control

This batch came out so good, I used fresh Curry Powder this time, chopped the Green Onions a touch larger and left the Cashews in bigger pieces.
I'm taking a container to my Mother tomorrow, she'll love this.

I made a little stir-fry thing for my wife - bok choy and mushrooms, flavored with garlic, ginger, sherry, soy sauce and a little sesame oil.

Mapo tofu using pork mince and a spicy mushroom XO chilli oil. Served with steamed cauliflower, broccoli & zucchini tossed in a little sesame oil & s/p.

No, it wouldn’t really occur to her to ask, and I was just using up stuff in the fridge before we leave tomorrow for a short break.

It wasn’t intentionally vegan, it’s just the way it turned out.
