It so coincided that it was our 2nd year of dating anniversary.
Happy anniversary!

Dessert so wife bought these pineapple flavoured ice cream encased in chocolate. Pineapple centre was good.
I think TastyReuben Would like these.?

I could eat one, but it wouldn't be the first thing I'd reach for, more because of the ice cream than anything else. I don't really like ice cream that much.
 
I bought some fantastic fresh red grouper today. The filet was nearly 2 pounds. I cut up some of the end pieces into chunks, dredged them in a lemon-pepper flour coating, then in an egg and buttermilk wash, final coating with panko bread crumbs. Fantastic!

The rest of it I will top with crabmeat mixture tomorrow night and bake.

rascal. My hubby loves those pineapple lumps. He lived in NZ for 6 months as a youngster.


Today we were finally able to celebrate my sons 18th birthday. It was a couple of weeks ago but due to ever changing Covid related restrictions we had to move it.

He’s a gamer & he loves the world of Skyrim so I made a “Sweet Roll” for him. Yes, I nearly served it before my niece told me she hadn’t got pics.

It’s a quite dense vanilla yogurt bundt with a lemon icing sitting on a plate of cream patisserie

My creative urge has returned after many weeks of coughs and colds, so:

I got some nice juicy prawns.

Performed some basic butchery.

Got a vegie base going including the last of the leeks from the garden.

Threw in the prawn heads and fried off before adding a tomato and veg stock.

After simmering and straining it was ready to meet some rice.

The final result. Risotto Milanese with prawn.

Served in bowls that I bought this morning just for the dish. Yum.

The flavour was incredible, the whole house was filled with the lovely smell :happy:
 
Say what you will about tofu, it is satisfying to make by hand. There's this whole (stress relieving) process of wringing the soy milk from the pulp that I very much enjoy -- plus tofu does have flavor when freshly made and eaten the same day, a very subtle, almost nutty sweet quality.
