This was yesterdays evening meal and I couldn’t get a decent photo due to eating most of it before taking a pic :laugh: but it was so tasty and a casserole with not too many ingredients that only spends 30 mins in the oven that is still really good? I think it’s worth a mention!

I don’t usually like dried fruit in food but the dates were good. I added a punnet (250grams) of chestnut mushrooms for flavour, bulk and texture which worked well.

It’s gone straight on my make it again list which nowadays most recipes don’t!
 
After Physical Therapy today, I was hungry, and couldn't wait till I got home, so I stopped at Taco Bueno for a favorite junk food of mine, a combination burrito. A mixture of TexMex ground beef and refried beans with cheese wrapped in a flour tortilla. It did the job perfectly under the circumstances. No photo -- I ate it in my car in the parking lot.

That was lunch. The rest of the day I grazed, as I often do.

Oh, Taco Bueno is fast food TexMex that is WAY better than Taco Bell.

I saw a video where the ground beef they serve is freeze dried and it comes frozen in a box like gravel..they take some out and put it in an insert and add water then heat it in the steam table to reconstitute it...

We have a franchise up here called Bar Burrito that does the same thing
