A bit of a crappy day so some comfort needed, pork belly and roasted veg with some apple sauce.

Have always loved pork belly as a meal. Has to be slow cooked first to render a lot of the fat out then in can be roasted to blister the cracklIng.I've never cooked pork belly as a meal. I've always thought it to be too much fat. But, I'm seeing it a lot on food videos on YouTube.

I only ate two slices the rest went in fridge.Even with the low sodium version, that's probably at least a whole day's worth of sodium on a plate.

Only thing is it requires a lot of salt which I enjoy but I can’t imagine that would suit your diet
