What is this Pumpkin Vinaigrette you speak of Sir?
That salad has my name written all over it!
I’ll post up a recipe shortly. I may as well enter it in the challenge.

I’ve made three sidecars, crackers, and vinaigrette, all from one can of pumpkin, and I still have pumpkin left over.
 
There would have been a photo of what I ate for evening meal, but hubby defeats me some days and today was one of those days and I didn't get to eat it, literally.

It should have been the same as last night and to an extent it was, but it wasn't. Last night I cut up the veg and gave him instructions for steaming the veg. I added water to the cheese sauce and reheated it (it thickens considerably when heated). Tonight he did it because he feels better than yesterday and I don't.

The result is that last night I had something to eat. Tonight I didn't. When my asthma is bad and I have a sore throat, I can't eat uncooked food with a thick sliceable sauce. I simply can't swallow it and I choke. And that's what happened.

But the bit that gets me is this:

I simply don't understand why he thinks cutting the veg into massive lumps (broccoli or cauliflower) three or four times bigger than I cut them into means that they will steam in the same 5 minutes they take when I cut them up. Why doesn't he twig that they need a longer cooking time? He's educated, sensible and used to be a good cook, but sometimes?

Guess I'm back on cooking duty tomorrow, so I can actually eat something.

I reckon sometimes if someone’s not really engaged with doing a job and theres a slightly easier way of doing it like cutting the veg larger they deviate for that brief moment then go back to dutifully following the instructions.
A bit of a “that’ll be alright” moment. Like they are doing a good job precisely following your instructions but not thinking at the same time.

Well thats how Mr SSOAP follows instructions. If I leave him to it with very vague instructions that it needs to be cooked a certain way he finds out how and does it well.

I've never cooked pork belly as a meal. I've always thought it to be too much fat. But, I'm seeing it a lot on food videos on YouTube.

You'd be surprised at how much fat renders out regardless of the cooking method, but braising takes nearly all of it out. I was totally shocked the first time I braised a pork belly. It ended up 1/3 the size it started out as, but was still great to eat.
 
We went to The Cheesecake Factory for dinner Wednesday as 1 just opened up a couple of miles away. Tex-Mex eggrolls, which came with a cilantro/jalapeno crema, a mushroom burger with Fontina and Swiss cheese which was quite good, for me, and Craig had Cajun jambalaya pasta, which was ehh, according to him. Take home Godiva and dulce de leche cheesecake.

Last night was leftover lasagna.

Hopefully going out tonight again.
