What did you cook or eat today (October 2022)?

Since I saw murphyscreek ‘s excellent version, I knew I had to have some beer-butt chicken of my own:

Potatoes were just roughed up a bit, skins and all, and the whole chicken was just beautiful, and yet I didn’t take a pic. 😖
 
Craving that now! What did you make the liquor from?

I followed this recipe for the liquor (the pie is just a regular beef steak pie I make), though I ended up blending mine as it went a bit lumpy.

TBH if I made it again I wouldn't use a Knorr fish stock cube, but probably home-made fish stock or even chicken stock.

Two pieces of Ham Steak fit absolutely perfectly in my 10 inch Calphalon pan, was giggling away while cooking, so much so, that DH had to come and investigate.

Boar's Head brand Sweet Slice Ham (I'm looking at you TastyReuben :watching:), that I asked if the deli counter lady could cut into nice sized Ham Steaks, along with some frozen "fine green beans" aka Haricot Verts and Trader Joe's brand Hatch Chile Mac `n Cheese.

That was really yummy!
We couldn't finish either of our plates, so I put the leftovers together for a small Bento-Box lunch for my Mother... I'll take that over to her apartment tomorrow, along with a few other dishes that I've made up for her.

I'm thinking for dessert later, we'll have a It's-It Ice Cream Sandwich 🤤
 
Char siu pork loin and mini hasslebacks. Benefit would have been had from a sauce but the sauce that I attempted by heating the marinade went to jellified mush. Not to worry, I had a beer to hand.

Yesterday's dinner was roasted salmon with pasta and brussel sprouts

And a looooot of food was cooked yesterday...I'm trying to make better use of the oven by using it to cook multiple things at once, so I also made roasted duck legs with potatoes (the potatoes were a failure but I'll try again next time). Also made scrambled eggs for my breakfast, pasta, and greek yogurt for my snacks. With all of this I probably have enough food to last me until Sunday.

Baby arugula, & spring mix greens, chickpeas, black olives, green olives, anchovies, tomato, and hard-boiled egg. Dressed with oil, vinegar, my house blend seasoning, and a sprinkle of everything but bagel.

DH & I took my Mother to a new-to-us restaurant that has only been open for a few months ...

I asked for 2 Street Tacos, one is Shrimp and the other Al Pastor. Good, but too much Pico de Galo for my liking. Note to self: ask for the toppings on the side!

DH had 3 Carne Asada, nice and tender and juicy, not over done like some places.

I tried a bite, excellent, for me and Mom anyways, but not DH. There's some Refried Beans tucked in there, which he does not care for.
We'll need to go back again, said DH :ohmy: says the man who "claims" to dislike Mexican Food, :cool:yeah right!!!
