What did you cook or eat today (October 2022)?

Leftover frittata and tater tots. That’s because it was going to be leftover frittata, grits, and pico de gallo, but I boiled over the milk and made a helluva mess.

I’m also prepared to say, for the first time, that the air fryer has outperformed my oven for something - the tater tots. They were faster and more crispily cooked than I’ve ever gotten from the big oven. It’s now my dedicated tater tot machine.
 
I am finally getting around to cooking. I have a big pot of beef and vegetable soup simmering. That is mostly to freeze for my mom. I will have some, and leave some for my sister. Tomorrow, I am cooking lunch for my mom and me. Flat iron steak and steamed broccoli and cauliflower. Tomorrow evening, 'm cooking my mom's favorite -- shrimp and pasta. That will also get frozen for later.

My mom doesn't eat in the dining room on Sundays, because it is "family day," and it is crowded and loud. Those are two things she doesn't like. So, she eats food that either my sister or I cook and freeze. Mine (of course) is better. :smug:

Whole milk mozzarella, gouda and munster.

I did a stir fry of:
very thinly sliced boneless Pork Loin, marinated in Shaoxing, Shoyu, White Pepper and Cornstarch
Snow Peas
Sweet Red Bell Pepper
Sweet White Onion
and about 2 Tbsp. minced Garlic
a sauce made with:
Chicken Stock
Shaoxing
Shoyu
Oyster Sauce
Sesame Oil
White Pepper
Cornstarch
All served over that ever present steamed White Rice (Calrose)

No photos because we didn't have any lunch and I was starving!
