Shrimp tacos with a cilantro lime and Greek yogurt slaw topped with cotija.

We went to a great restaurant in Pensacola Beach, FL with an old dear friend of mine who is a traveling chef. I haven't seen him in about a decade. We had appetizers to share that included tuna poke, smoked tuna dip, and oysters on the half shell, then MJ and I both had the shrimp and grits whilst DH had some other kind of shrimp dish (not sure what but he loved it). The food was fabulous of course but we were so enthralled with the details of MJ's recent trip to Morocco and looking at the photos I didn't take any photos of our food.
 
Ocado who promised redelivery by 12pm still aren't here at 13.18 inspite of saying they’d try to be here by 11am.
Not at all impressed as they have not kept me even vaguely informed. My order on their website simply says ‘We cancelled this order”

Anyway fridge n freezer raid for lunch. Crimpets (sealed baked wraps) with chilli con carne, cheese, red peppers, garlic mushrooms, red onion and hot sauce.

I like that you can get long life wraps as a store cupboard ingredient and use whatever odds n ends you have to make a very easy meal.
I had enough chilli con carne for a mean one person serving but in a crimpet with some cheese it easily went to four large wraps.
My son is a big eater and he only managed one and half 👍

Might suit you too for using up fridge stuff. Or taking something different for lunch at work.

There’s lots of creative ideas on their facebook page but generally I use it for leftovers that aren’t enough to make a good meal of, and for using up stuff in the fridge that’s close to turning.
I’d avoid the apple pie ‘recipes’ though. I tried multiple iterations and that one never really worked!

There’s something comforting about them, the same way a cheese toastie is comforting but obviously with wider range of flavours and ingredients due to it all being sealed in and baked.

Ps the original crimpit sealer for using with thins is a bit of a pita. Too small and fiddly.
