Same dough as yesterday, but that last pic shows what sitting in the fridge overnight will accomplish. That edge crust was just the right amount of crispy on the outside, soft as a ball of cotton and moist on the inside.
Toppings on that are pecorino (twice), crushed red pepper flakes, mozzarella, homemade sauce, olive tapenade, and pickled Italian cherry peppers.
Cheap meal mince on toast.enough for a toasted sammy tomorrow.
