What did you cook or eat today (September 2024)

48 hour ferment on my Sourdough pizza dough. Mozzarella and provolone blend, with red onions and banana peppers and pepperoni. Everything bagel seasoning on the crust and a sprinkle of fresh thyme on top.

I’m not a big fan of tofu, but it looks really appetizing here.
No worries, I don't like meat or fish at all and nothing makes it look appetising to me.

Tofu is, however, very hit and miss depending on the brand and where it is made (country). When I lived in the UK, we had only found 2 brands we liked, but since moving to Australia, we've yet to find a brand we don't like. A lot depends on how it is packaged and then drained and treated for storing. A lot also depends on how you prepare it. This one and another we use requires minimal preparation. We often just serve it as is, on sandwich for protein. It's not packaged in excessive amounts of the liquid that makes it, and that does make a big difference.
