Courgette, rosemary rice cake with salad

It wouldn't be Christmas without sprouts.

And a fruit salad for dessert. We'd had a mango in the fridge for at least 3 weeks and kept forgetting to eat it. So I pulled it out to give to the chooks and whilst cutting it up we established that it was exceptionally good, very ripe and once my OH had washed mango juice off his elbows, the chooks got the stone and the skins, we had the flesh.

After 6hrs 30min in a sous vide at 62c and 4 minutes in some hot peanut oil this was the final result:

I was pleased with it but it wasn’t perfect though; the string stuck to the chicken skin and bacon so I couldn’t remove it without destroying each segment. I served it up with the string and told them to remove as they ate.
