Yeah, you are there! You extract the tomato 'water'. The tomatoes are roughly chopped with a bit of salt added and then put in a muslin cloth to drip overnight. Its magical because the liquid is the very essence of tomato. It surprised me because I'd read about it before and thought -'can it really be that good?' but it really was. All I did was add a little cream to make a white tomato soup.
