I do think this is unfair. Sorry - It is very much a European thing. SandwichShortOfAPicnic, karadekoolaid , Windigo and Timenspace are more likely to know it. Its not easily found even here. I first ate it in France and was entranced.

Its a beautiful fish and tastes quite different from other fish in my opinion. Not least because the liver can be left in the cavity when its cooked and imparts a very special flavour. I cooked this very simply, in the oven with the cavity stuffed with herbs (lots of roesmary) and lemon:
