I would assume it is based on the brackish level of the waters that they came from. There are a lot of oyster bays all over the US, and some have more rivers and streams flowing into them than others...oysters that are sourced from close to the river/streams have less salinity than those that might be closer to the part of the bay that opens up to the Gulf of Mexico or the ocean.Never heard of oysters described that way but I assume it means how salty they naturally taste. Nobody in their right mind would brine an oyster.

I think the smoked pork chops. I like the idea of the jumbo lump crab cakes, but not in a sandwich. There are bread crumbs in the crabmeat mixture so that's just a bit much. What are the side choices? I'm thinking some mashed potatoes and peas (here's looking at you, SandwichShortOfAPicnic) or some steamed broccoli with butter would be nice.

I'd have the cuke salad too, that or the broccoli salad depending on what's in it. The green side dishes are pretty limited, eh? Scalloped potatoes would be good, but I might have a baked potato instead, forget the mashed. Although they do sound good with the smoked pork chops.
