Indian cuisine consists of a variety of regional and traditional cuisines native to the Indian subcontinent. Given the diversity in soil, climate, culture, ethnic groups, and occupations, these cuisines vary substantially and use locally available spices, herbs, vegetables, and fruits. Indian food is also heavily influenced by religion, in particular Hinduism and Islam, cultural choices and traditions. Indian cuisine has influenced other cuisines across the world, especially those from Europe (especially Britain), the Middle East, Southern African, East Africa, Southeast Asia, North America, Mauritius, Fiji, Oceania, and the Caribbean.
Indian chaura na poora, or Black-Eyed Bean Pancake Batter. This was a touch too thin. It needs to hold its shape better, more like stiffly whipped cream.
This is supposed to be a real treat if you're an Indian. It's my wife's birthday tea Sunday night and she spotted this recipe from Margaret fultons book. ( mg,the same as your book) it's marinaded for 48'hrs so I'd better get started. Pics to follow

I use this recipe works every time
1 cup gram flour
1 cup plain flour
1/2 tsp bicarbonate of soda
2 1/2 tsp mustard seeds
400ml water
Mix dry ingredients together add enough water to make a loose batter. Add a spoonful of batter to a oiled frying pan as soon as the top bubbles flip over. I...
The recipe: (Vegetarian or vegan), see below.
My best luck in making rice is by using my Japanese rice cooker, so that’s what I’m going to do. (Burnt too much rice to the bottom of pans back in the day… not going back there, and Basmati rice cooks well in one of these cookers…)
The cumin is...
Grilled West-Indian Pork Chops
This was last night's dinner. DH made 1/2 recipe of the rub since we only had 2 chops. He also cut way back on the red pepper because of me, so the full amount should be hot for those that like it that way.
For the rub: Combine in small dry skillet over medium...
Often overlooked as an ingredient in curry, fish is perfect for a fast dish and works incredibly well with curry spices. Choose a firm fleshed fish such as cod loin, halibut, pollock or monkfish. Here is a lovely recipe using halibut from Gordon Ramsay (as mentioned by @medtran49 elsewhere). You...
This is lovely comforting dish. It takes some inspiration from French onion soup which classically uses beef stock and indeed, you could use a light beef stock instead of the miso & Marmite. I just wanted to keep it vegan. The tarka with nutty toasted mustard seeds and fragrant curry leaves adds...
Each month we choose a different and accessible dish (or type of cuisine) so that most of us can join in, cook and post the results. This month, Indian Food has been chosen. To make it easier, this includes Indian fusion dishes.
Please join in and tell us about the Indian dishes you create...
These are vegan. I love them. I had to do my best to re-create them after ordering them a couple times at an Indian restaurant a little out of my way for regular visits. More local restaurants to me seem to lack this wonderful food! This recipe is also gluten-free if that is something you...
I first came across Xacuti in the CookingBites Alphabet game - which goes to show that despite its apparent simplicity the game is really quite educational! After looking at various recipes and experimenting a bit I settled on this recipe which is adapted from a recipe by Maunika Gowardhan*. You...
not sure if it's the right thread but in doing Indian tonight, pics to follow. Kids will get roast chicken with chips n salad. They don't eat Indian yet but they may try
Snacks ready will be chilly popadoms

This is a Madhur Jaffrey recipe from Eastern Vegetarian Cooking. I've not yet attempted it and to be honest I'm a bit daunted! Has anyone else here made dosas?

Have you ever made dosas? I haven't ever tried but I think they are notoriously difficult. Traditionally they are made from a fermented batter made of rice and gram flour. I've seen them on TV being made in India on street stalls - large, paper thin and made in a few seconds.
Jamie Oliver has...
I've been shopping for spices in local Indian shops for decades and I've often see these large packets of dried bay leaves. But I always ignored them - after all, fresh bay leaves are so much better and I have some in the garden. What I failed to realise is these are not bay leaves as we know...
A take on a classic 60’s dinner party starter: smoked mackerel pâté; using Greek yoghurt and Indian spices. The beetroot achaar (pickle) adds an aromatic, sweet and earthy contrast. Serve it with mini Naan breads or toasted sourdough. An easy no-cook recipe!

Panch puran, also known as panch phoron, is a traditional spice mixture from Bengal. The word panch means ‘five’ in Hindi and the spice mix is sometimes called Indian five spice. You can buy it ready mixed in Asian supermarkets but its easy enough to make your own. Please tone down the chillies...
A little similar to Chicken Roasted in Spiced Yoghurt although this recipe calls for skinned chicken. I found this in an old recipe book. I've not tried this particular recipe yet but it sounds to me as if it would work rather well. Of course, strictly speaking, tandoori should be cooked in a...
