I cut my Brussels to just over the halfway point. They cook really nicely and fractionally open out, allowing all the buttered goodness and flavouring you’re going to throw at it to really penetrate 

We have found it necessary in the airfryer it oven when roasting then to get the middle cooked. Else is burnt on the outside and raw on the inside.Now there's something I stopped doing years and years ago. Like you, I only take off the really scruffy leaves outside; but I don't cut a cross in the base. I've never noticed a huge difference, cross or no crcross.
Do you like a little raw spinach in a salad mixed with other greens?I would say for me, it’s more like things I didn’t like as a kid that I tolerate now - mushrooms and spinach come to mind.
