I didn't want to post a recipe for buckwheat pancakes which cracks when folded... I need to try again with adjustments. For the vegan version see here (they cracked a bit but not so badly): Galettes De Sarrasin (Buckwheat Pancakes)

The recipe I used for galettes saucisse last week was ever so easy - I'm usually very good at ruining pancakes! 550ml whole milk, 225g buckwheat flour, 2 eggs, 1 tsp salt. Just a little butter for frying, but they came out totally pliable and easily wrapped around the sausages. Could it be to do either with the thickness or with the cooking time?

I had to unwrap it all later because I forgot the mustard coating!
