Correct! The last few clues have been hidden words. There will be an indicator in the clue that you are looking for a hidden word. In this case the indicator is 'to discover'. Fruit is the definition
Unwrap ricotta to discover fruit (7). The hidden word will always appearwith the letters in the correct order (not jumbled up as in an anagram).

And in the following clue, 'eats' indicates that a word is hidden and thus fruit is the definition. So you are looking for a hidden word meaning a fruit in 'crap lumberjack'. You simply ignore the rest of the letters.

tangerine spotted in around 15 seconds in that one, given I knew what I was looking for so to speak

I didn't see the other one because I was using unwrap to mean an anagram... or hidden word rather than 'to discover'.
