Cryptic food and drink

One of Paul's recent clues made me laugh out loud when I got the answer:

Tycoon requiring a wig, lacking leadership: a word of caution about this arse (6,5)

 
The Mallard Tavern has just acquired a job lot of beer from Yorkshire and the regulars demanded bar snacks while testing the goods.

Ah! I have made attempts at theTimes crossword in the past but only because my Dad taught me a few tricks when I was a bored 12 year old. I'm very rusty. But I will try to think of something. :happy:
 
Same rubbish about 'extraordinarily pushy Greens.' (5,4)

Its an anagram. Same rubbish (rubbish is an anagram indicator - indicating that the word same is jumbled up) about (another indicator meaning the letters of same are going to be mixed up with something else) extraordinarily (another anagram indicator - indicating that the next word pushy is going to be jumbled up).
greens (that is the definition). So we are looking for something green which is an anagram of same and pushy = mushy peas. As usual, all punctuation is ignored - so take no notice of the inverted commas. They mean nothing. It is a clue designed to confuse because you have to work out which words are indicators and which words are used in the anagram. Also it took me a while because mushy peas aren't normally classified as greens. Naughty...
