Plans for today (2023)

I doubt there are many inhabitants of India who eat tripe (although there have to be some, somewhere,) and "parsley" is an unknown herb in Indian cooking.
However, just to make rascal drool, I'll walk you through the menu.
Starters were Vadas (think mini falafel, with Indian spices) and Kachori (little fried pastries stuffed with spices) and a tamarind chutney.
Main protein was Chicken Rizzala (think "green" Korma) with onion/cashew base, coriander and mint leaf and subtle spicing.
Basmati with some toasted almonds, raisins and a bit of turmeric for colour.
Mung Dal was tiny green beans cooked with onion, garlic, ginger, cumin, turmeric and lots of chiles.
Aviyal was 5 different vegetables sauteed with fresh coconut. mustard seeds, turmeric, chile powder and fresh chiles. served with (homemade) mango chutney and Green Mango Pickle.
Dessert was Gulab Jamun.

Drooling over, chin wiped. Maybe we would discuss recipes?

The tamarind chutney I buy is real hard to get so when I see it I buy it. A year or two supplies.

Spent the day cooking...

Yesterday I blanched 1kg of almonds to get the skins off. Then I left them soaking for 18hrs or so.

Today I started the process of turning them into our "Christmas" vegan feta cheese.

That involved juicing a lot of limes, so that I had about 600ml of lime juice. Then I started the pureeing of the almonds with olive oil, lime juice, fresh garlic, salt and water. As little water as possible because once it is all assembled, it goes into the fruit press (lined with a cheese cloth) to be pressed to extract as much water as possible.

But I think I may have to divide the cheese once it has been pressed because I haven't found my notes and I've got this nagging feeling I should only have processed 750g of almonds, not a full 1kg.

Tomorrow or the day after, I'll need to bake the cheese at a low temperature for a long time, so try to dry it out further and also to actually bake it. Then it gets to mature until it's time to eat it.

I'll also be processing the cashew nuts tomorrow, or starting the process. I've got 2 other vegan cheese to set going. A vegan Camembert (cashew nut & coconut cream) and a vegan blue cheese (also cashew nut & coconut cream).

And I've made tea. Curried cauliflower, dill and pea soup. Only we don't have any "curry" powder, so I had to make a fresh batch of garam masala and add Aleppo pepper to the mix. I didn't want a spicy hot soup, my asthma still can't handle that, but a mildly spicy will be fine. There's too much of the soup. Hubby didn't question why almost everything on the shopping list this week was an even number... I've no idea why it was, but everything was double the usual quantity, so he just bought twice what we needed off everything! So I've 2 large whole cauliflower, 2 lots of fresh dill, 2 lots of sweet potatoes, 2kg of tomatoes, 2kg aubergines, 2 packets of oddbunch courgettes, and so on. If I don't use it, in this heat, it will go off very quickly. So I'm having to cook double of everything and then freeze at least half. I wish he'd think to ask sometimes! :banghead:
 
Staying in, waiting for my new cooker.

It's like waiting for Santa, so excited.
Funny when I woke up this morning I thought I wonder if they had their new oven yet? Then thought you have more important things to think about other than if someone else you don’t really know has their new oven 😆

I made up a new dish called red ranger pie (because the oven is maroony red). It was great, not the dish particularly although it did go down well, no it was the joy of a working oven… partaaay 🥳

Given that is my first ever wok burner, it has to be a noodle stir fry tonight.
 
In about 30 minutes, I'l be leaving my sister's house, running an errand, then driving to Intercontinental Airport in Houston to fly home. I need to get there early, so I can eat at my favorite TexMex restaurant... yes, it is in an airport.

It will be nice to be home. Six days with my sister is at least two days too many. :banghead:

In about 30 minutes, I'l be leaving my sister's house, running an errand, then driving to Intercontinental Airport in Houston to fly home. I need to get there early, so I can eat at my favorite TexMex restaurant... yes, it is in an airport.

It will be nice to be home. Six days with my sister is at least two days too many. :banghead:

I get along with my sister okay, but she has some issues that I can only take for so long, such as eating dinner out WAY too much. She's also pretty rigid, and does not deal change well at all. In her world, there are only four restaurants in Houston, and she only goes to them -- over and over and over. If I suggest something else, she looks at me like I am speaking Martian.

What makes you consider it too much?
No criticism, I would too, just a lot of people hold eating out in high regard. They don't seem to grasp you can get fed up with it. Especially the same sort of dishes appearing again and again!
