Plans for today (2025)

I went to work so now the plan is

and food.

I didn't really have any plans to do this, but whilst I was drinking tea, I cleaned out a drawer in my kitchen. I wanted to clean out my nightstand drawers this afternoon, but MrOH decided to lay down for a nap. Not much I can do until he wakes up that wouldn't be noisy. Maybe I'll start some baguette levain.

Yeah I saw that in the "smile" thread. Mine wasn't a junk drawer, it was the home for mostly unused kitchen gadgets like the garlic press, ice cream scoop, oyster knives, etc., although I do have a junk drawer that will remain untouched because MrOH has to help me with that...most of it is his stuff!

So I have a frozen bag of scallop pieces that I got on sale at a great price awhile back. I took a handful of it out and soaked it some water, then drained and put the pieces on a paper towel lined plate and put it in the refrigerator. Tonight I am going to try to make this seafood stuffing that I had awhile back that was really good. Occasionally I have bought these frozen "stuffed" scallops from my grocer's seafood department that is basically stuffing mix, scallop pieces, herbs and spices in scallop shells that are just baked in the oven for about 20 minutes. I made some hollandaise to top them and we both liked them a lot.

So I had washed and saved the scallop shells with the intent in mind of coming up with something similar and I will use both lobster meat and scallop pieces in it. I still have a little bit of lobster meat leftover from NYE dinner, as those lobsters were huge--I had thought they were 8 ounces each but when I thawed them I found out they were 14 oz. each (just shy of a pound) so we ended up just splitting one of the two that I cooked. In case you were wondering, I kept the leftovers in an airtight Pyrex container in the part of my fridge where water bottles get partially frozen if left there...so the lobster has kept really well and there isn't much left, but I need to use it up, so here goes!

Okay DH is up but I have kinda lost my motivation to clean out that nightstand, LOL!

Scallop pieces? We don’t get those, they sound very useful. Guess they’re good value?!

I (almost) finished weeding the garden this morning
I say almost, because it got to 1.20pm, I looked at the last 4 mt2, and said to myself "Nahh, time for a Sunday beer!"
Anyway; pushed off for a quick shower then opened the fridge. A lump of fresh ricotta. A packet of chicken breasts. 1 chorizo. 1¼ peppers. A bag of frozen spinach. 1/4 bottle of prosecco left over from the 31st...There was a packet (and a bit) of cannelloni in the cupboard.
2 hours later, cannelloni stuffed with ricotta & spinach, slathered with tomato sauce, and a boatload of chicken a la españól.
That's food sorted out for the next 2-3 days!

I wish I could get my OH on board with eating leftovers for more than one day!
