The CookingBites recipe challenge: avocado

Well we three are going in similar directions here. I am going to make my guacamole, then pulverize some tortilla chips and coat guacamole patties in the "breading" and fry in them in avocado oil. I was waiting forever for my avocados to ripen and then some other stuff came up (mostly work related) but I think I can finally get to it today.
Well that worked! I just have to play with this recipe a bit more and refine it. The patties did not work, but rolling them into balls and freezing them slightly before rolling them in maseca, dredging in buttermilk/lime, and rolling in the tortilla chips, then chilling in the freezer before frying did the trick. They are really tasty!

No, I need to tweak it a little before posting it. It's good but since I was experimenting, I was using a few different methods (shape, breading methods, frying temp) with the same batch of guacamole so I don't know how many guac bites a batch will make and I also want to do something different with the guacamole itself to make it a bit dryer so it's not quite so loose, and not sure if the buttermilk dredge will need a touch more lime juice? I also didn't measure some of the ingredients so I need to record all that properly. I am leaving town tomorrow morning and won't be back until late Sunday, so I will make a fresh batch of guac on Monday or Tuesday and get the recipe written up then.

Edited to add: the most fun thing about these is that they are so easy to eat! Bite sized, just pop in your mouth--and no annoying breakage of chips while dipping into the guacamole! Also it's a great way to use up all those broken pieces of chips in the bottom of the bag of tortilla chips (I whirred them into crumbs in my mini food processor). DH asked if I should make a dipping sauce, and I thought about it and said no, why? Do you need a dipping sauce when you dip your chip into the guacamole? I did put some tomato in my guacamole so it's kinda a combo of salsa and guac anyway. And The guac bites are creamy and soft enough where a dipping sauce really wouldn't work very well.

So yeah, I will get on that when I get back into town...

We had the tarragon mayonnaise with our regular BLTs, and MrsT immediately mentioned that the mayonnaise (which has lemon in it) was a little too sharp for the sandwich as it was made, but if it had included the avocado, it would have been perfect.
My favorite BLT is a panino. It is a regular BLT, usually on a ciabatta bun, with the addition of avocado, onion, and cheddar cheese. I put it in the panini press and bake it until lthe cheese is melted. Make one for your wife. She is sure to love it.
 
Here's my next entry. Nothing particularly extraordinary, but I had half an avocado left over and thought I might as well use it. This is the Venezuelan version of guacamole: Guasacaca
The difference, perhaps, is the use of vinegar instead of lime juice, a slightly thinner texture and the ají dulce (sweet chile) . The picture does not do it justice, mainly because my blender gave up the ghost and I had to mash it with a fork!

I made a guacamole last night. I used the standard Mexican recipe but added a chopped jalapeno pepper and small jar of chopped pimiento. It made good use of one of my frozen Florida avocados. I learned one thing. While they turn to mush after defronsting, they maintain a bit more body of you defrost them in the microwave. I have no idea why but the guacamole was just fine.

I am unfortunately not going to be able to do that. My DH had a bit of a health scare today and we went to the hospital (he's fine) when my intent was to play with that recipe and write it up. Tomorrow is a big work day and Wednesday is light work but leaves no time for this. I appreciate the judge's flexibility with the time extension but life happens and maybe I can participate in the next challenge. Still have some nice avocados in the refrigerator I need to do something with, though. Good luck to everyone who entered!

You can still post the recipe down the line when you get the chance to play with it. It doesn't have to be in the challenge thread.
 
I've read all the recipes. My impression is that the cooking talent on this web site is nothing short of phenomenal. Avocados are a pantry item in our kitchen. I have some ripening all the time and yet you folks contributed uses for avocado that I have never conceived let alone prepared. We had avocado desserts - chocolate cake, chocolate pudding, whipped avocado. We had salads and sandwiches and main dishes and side dishes. We had avocado used as a thickener. It is impossible for me to make an objective decision about a winner so I will sleep on it overnight and come up with a subjective analysis tomorrow. Thanks to everyone. Well done.
 
FYI - we do still have about four hours before the challenge officially ends, so time for any last-minute submissions.
