The CookingBites recipe challenge: cooking oils/fats

That looks just like the grease that I render off my bacon, minus the crunchy little bit of character.
My grandmom would “clean” her bacon grease with water (pour it in a jar, shake it up, set it down upside down overnight, and the fat and water separate, with all the crunchy bits in the water).

We went through so much bacon grease that Mom didn’t even bother to strain it. There was no time for the dregs to get rancid before it was used.

By the way, for those who haven’t had me as a judge, I highly value featuring the ingredient instead of just putting a small bit in an already great recipe.
How about a TastyMom favorite - a piece of cheap white supermarket bread, and a couple of tablespoons of cold bacon grease smeared on like butter?

Mom’s diabetic, you know, she’s got to watch that sugar…and there it goes in her coffee…!

Speaking of coffee, Mom (and her mom) would also put a little bit of bacon grease in their coffee - and now, all the trendies swear by butter or coconut oil going into your coffee to boost the health benefits. :laugh:

I've used cacao butter before. Big time stir thing...

Recipe - Spinach salad with warm bacon dressing
 
Okay, I'll start off with an old, but never posted recipe of mine.
Mom would make a simple hot bacon grease dressing, just vinegar, sugar, and bacon grease and pour it over some fresh salad greens.

She called it “kilt salad,” which she explained was because all that hot dressing “has kilt that salad dead!” - it was her favorite salad dressing, and she’d also pour it on boiled potatoes.

I almost said “don’t submit butter on a spoon as a recipe”, but I hadn’t considered bacon grease on bread. 🤔
 
I tried making something vaguely vingraittey
Green beans, red wine vinegar, cold & single pressed peanut oil and some fish sauce.
With egg
To accompany my lasagne as I was hungry

It's very basic, so not sure if it needs a recipe

It worked pretty well
I do have to admit that my lasagne normally contains some fish and soy sauce. And chili's :hyper:

(Off topic, the Romans used garum in their cooking, pretty similar to fish sauce (if what I read is correct))
