I've just noticed that the challenge closes in just over 3 hours. Why didn't someone remind me?

You don't need to sample them... but there is no rush. When you have time, your tomorrow!
 
@Yorky, the easiest way to see a summary of entries is to click on the 'cookingbites recipe challenge' tag . You then get a list of current entries with live links. . Sorry - you probably knew that!
 
Yes - the easiest way to deal with cloves this small is to use a good garlic crusher. Now, thanks to @SatNavSaysStraightOn 's recommendation I have acquired the Rolls Royce of garlic crushers. Precision engineered, beautiful to use, easy to clean and VERY expensive (its WMF). Its weight in your hand tells you everything. It will last a lifetime. WMF Profi Plus Garlic Press

I honestly didn't bother with garlic crushers until I bought this one. There is no need to chop or peel even the biggest clove...
I'm Australia, some cloves need cutting into 3 to get into the press!

They all sound good and thanks for posting them. Thanks particularly to @SatNavSaysStraightOn who sat this one out. I am planning to make @morning glory's Gingered Prawns (or a slight variation thereof) this week but I think my favourite has to be Cindy’s Jambalaya. Jambalaya has fascinated me since I first heard The Carpenters sing about that and Crawfish Pie back in the early 70s (although I was never a fan of theirs). I’ll need to give it a go when the cooler weather arrives. I’m therefore picking Jambalaya as the winner with Ginger Prawns a close second

That may be a little awkward for me. About 2 years ago the importation of turkeys was banned here in Thailand and although the ban was recently lifted (I understand) what is becoming available is over Bht 600.00/kg (US$ 20.00/kg). We have a few locally "grown" turkeys but they have less meat on them than a Kenyan marathon runner (they are colloquially known as "racing turkeys").

Can you do chicken or Cornish game hens?

Chicken no problem. If I cook chicken pakoras it will be impossible to tell the difference (ooops, what a give away! :o_o:).

I had to Google "Cornish game hen". I believe it's what I would call poussin?
