The CookingBites Recipe Challenge: Nov 2015-June 2017

Congratulations @Cinisajoy! We will say then: Turkey, Chicken, Cornish Game hen (Poussin) or any vegetarian/vegan substitute such as Tofu, Tempeh or Quorn.
A deadline for entries has been set at midday (GMT) Wednesday 7th December 2016.

I need time to think about what to enter. I've use tofu everyday but that's g hardly a recipe in my wrap. plus I need something where it will naturally substitute for chicken and be chicken or turkey like target Tyson pretending it is tofu (etc)and mince beef being a better sub.

I think its all down to the type of recipe.

For example, one thing that it is quite hard (impossible?) to do is replicate a stuffed chicken breast. Quorn do a ready-made kiev but they are using the un-set Quorn and then moulding it (presumably) around the garlic butter before doing whatever they do to set it.
I can't see this working for Tofu. Although, potentially one could perhaps wrap mashed tofu around garlic butter then coat in breadcrumbs and deep-fry. Do you think that could work?

Tempeh I have never used (can't seem to get hold of it) so I don't know if that could be used.

I was thinking that you could actually cut tofu and take a central wedge out of it, to hollow it out then place the garlic butter inside (or any other stuffing) before putting it back together. aussie tofu might work better for this though. the other option would be something like 2 thick slices with suitable hollow made then assembled and something like roasted red pepper used to hold it together, cost in breadcrumbs... I have ideas but don't know how feasible they are.

Tempeh is more textured like chicken but less inclined to give that dryness associated with turkey. it makes for better texture variation in burgers and salads. sorry to tired to convey what I mean. I'll try again tomorrow if this is not making any sense. overslept by 2 hours today due to oh not being at work. alarm went off for my meds at 6am,and we both feel back to sleep immediately and it wasn't until 8-8:30am that we awoke and realised we had better get up and they was only for a call of nature waking us! must do better tomorrow, he actually had to go to work again!

I reckon a lie in is a good thing - meds or no meds. I didn't get up until 12.30 pm today!

Its interesting that all the recipes submitted so far are for chicken chopped up (or tempeh). No recipes for whole chicken/turkey or for whole chicken legs, thighs breasts. Thinking...
