You could make something with that accidental cheese. That would be putting it to a good use! Presumably your OH could eat it even if you can't?Darn it, I was in a really good vegan shop yesterday in Canberra where I could have purchased something for an extortionate price....
I'll have to decide if I am to make my own again. I am out of cashew nut cheese in the freezer at the moment, but could possibly be tempted to make a melting cheese for the weekend maybe. I also happen to have a cow's milk cheese that I accidentally made trying to make yoghurt (I left it out in the sunroom whilst out doing the shopping and I think the culture boiled rather than stayed at blood temperature)... The result is a sort of Wensleydale crossed with Lancashire/Cheshire at the moment, but we both thought it needed more time to mature.
Would cheesecake count? I have a recipe for cheesecake.
"all" I have to do is destroy the protein in allergic to in the cheese and I can technically eat it as well....You could make something with that accidental cheese. That would be putting it to a good use! Presumably your OH could eat it even if you can't?

Starts dreaming of beans and cheese on toast...
At the moment, it is maturing in the cheese cloth in the fridge. I may run a check on it tomorrow...
