Unusual sandwich flavor combinations

In Cuba a hamburger was called a frito and it had a pile of shoestring potatoes on top of the beef patty. It is still crunchy good to me.

I wanted to like those so bad when I first tried them years and years ago when my Cuban boyfriend/eventual husband and I would eat out, but the few little Cuban joints I tried them at used those canned shoestring fries, and they just totally turned me off that kind of burger.
 
This is hands down my favourite sandwich. It unusual from the POV it uses a lot of ingredients and certainly isn't cheap or quick to make, but the anticipation makes it taste even better.
I absolutely love the salty crispy chicken skin crackling in the sarnie and somehow you're able to taste every component 🤤

I'd skip the mint and add watercress or alfalfa sprouts. And bacon!
 
I figure if I don't like mint with lamb (and I don't) I'm not going to like it here, either.

But Lamb and mint is a different beast. Fresh mint leaf un-macerated or uncooked doesn’t taste the same.
That concentrated often sweetened or vinegary mint flavour isn’t in the same ball park.
It’s a bit like a fresh basil leaf tasting nothing like pesto 😂
If you’re happy with the smell of a mint leaf wafting up from a cocktail then you might like it.
On the other hand when you put that much effort in a sandwich why risk it?!

Funny you mentioned the basil or pesto because I was thinking either of those would make an excellent substitute for the mint!

I think the balance in the herb mayo is a bit delicate for pesto, I suspect it would dominate.
I’d probably just leave the mint out, there’s plenty of other stuff going on in that sarnie 😂
