Did another edit of my eggless yogurt cakes.

I adore ginger; not only because it's an essential ingredient in my Indian food ( and anything else in SE Asia), but also because I recall Christmas back when I was a kid.
We ALWAYS had crystalised ginger, and ginger wine (which my parents always gave us a sip of; probably to knock us out!) :laugh: :laugh:
 
I wandered across a recipe for a lime olive oil cake and having about a dozen limes gave it a shot. No sugar was called for in the batter but I added some until it tasted like cake batter. When it was done it certainly tasted 'olive oily', but not in a bad way, and the lime was just a hint. Not a bad way to get your olive oil I'd say.

I’ve made orange olive oil cake before, one of my favorites!
 
Lime curd (I have an IP recipe) and/or Lime Meringue Pie.
