I've never been very adventurous as far as cauliflower is concerned, preferring to have it in a sauce of some sort. I have had it with a bacon and cheese sauce, but it was steamed rather than baked. While I was looking at recipes today, I came across a recipe for a whole cauliflower that was parcooked, injected with a stuffing of bacon, cheese, kale, some other things, then rolled in bread crumbs and baked until done. It was cut in wedges and served. Not sure from looking at it if it was a main or a vege side. Looked interesting though.
Sounds good. The brine from pickle jars is a neglected gold mine!
I have a confession.
Tonight I fed my family Spam.
It’s all the fault of a How Stuff Works, Food Stuff podcast I listened to recently.
Anyway, I diced it and cooked it on a non stick pan until crispy, added bacon, garlic & kale, then drained pasta & a scoop of quark.
Was pretty bloody good actually.
A very colourful plate. I see you removed the bean casing for that lovely vibrant green.I had cauliflower in a wild garlic sauce (white sauce with shredded wild garlic leaves and black pepper), with strips of red pepper and freshly cooked broad beans, served with a couple of slices of crusty sourdough bread.

SNAP - although I don't think it was rolled in breadcrumbs. I was looking at a whole baked stuffed cauliflower - the stuffing is injected into the crevices of the cauliflower using a piping bag. While I was looking at recipes today, I came across a recipe for a whole cauliflower that was parcooked, injected with a stuffing of bacon, cheese, kale, some other things, then rolled in bread crumbs and baked until done.
