I just whizzed up about 15 dried chillies, 6 cloves garlic, a nob of ginger, 2 teaspoons tamarind paste, 2 teaspoons chilli powder, 1 tsp cumin, 1 tsp garam masala, 1 tsp mustard powder, 1 tsp fenugreek powder, 1/2 tsp tumeric, and a little water.
Before making the paste had already rubbed a little tumeric and salt on the fish. Then rubbed the masala paste in and left for an hour.
Fried the fish in coconut oil that I'd added a handful of curry leaves to, and also sprinkled a light coating of chickpea flour over the masala coated fish before commencing to fry.
