I was able to smoke my ribs today. I used a maple sugar rub sent to me by a friend in Canada. Subtle, but very nice.

Heart attack potatoes.
Sliced potatoes, just barely cooked, then layered in a casserole. On each layer, a pinch of salt and pepper, butter, plenty of cream, diced bacon and shallots. Cover with slices of Applewood smoked Cheddar, then repeat until all the potatoes are used. Top with strips of thin-cut smoky bacon.

Ugly delicious and a bit weird. Not lasagna, not moussaka, not cauliflower cheese but a mix of all three, sort of.

There’s a layer of 3/4 cooked potato slices, topped with bolognese, then potato, then bolognese, then some cheesy bechamel, then cauliflower & broccoli, then bechamel and cheese. Baked for 40 minutes.

DH had made mention of a new take out only restaurant two towns up from us and thought that we should try it sometime.
Today, it just so happened that I has going into the market two door over from this joint, so I popped in to buy something for our linner (late lunch/early dinner)... we need to have supper by 3pm, because I have my session with my personal trainer at 5pm :wink: he said that I must have a good carb heavy meal prior to our workout.
Anyways ...
It's an interesting concept, it's Pasta, Meatballs, Garlic & Cheese Bread, or a Meatball Sandwich, that's it.
You purchase everything by the bucket, either for a family of 2, 4 or ala cart as I did.
I bought 6 Meatballs, just so we could try them, ya never know.
I have bread and pasta at home.

Linner was on the table within 15 minutes.
DH likes his pasta meals served with a few Anchovy fillets, where I prefer it simple, Olive Oil-Grated Cheese-Black Pepper.
We both gave this place a thumbs up.
 
Hubby hasn't been well and I've been off colour so it was a cooked salad lunch only I over wilted the spinach, oh well...



Followed by an easy evening meal full of protein.



The new batch of Shatta is much hotter than the previous batch. Previously we needed about 1½tbsp to get to our normal 'heat' level. 1tsp of this batch was too hot for both of us. I'll try ¼-½tsp tonight!
 
Choila...a Nepalese super spicy drinks snack food which is made for Newari festivals. It's traditionally made with water buffalo meat (Buff Choila), but these days any meat or veg (e.g. duck, mushrooms) can be substituted. I made mine with brahman hump, slow cooked for six hours prior to using in the recipe. Was my first time making choila, or cooking brahmam hump ("cupim" in Brazil) so was a bit of an experimental trial. But extremely happy with the end dish.
