Choila...a Nepalese super spicy drinks snack food which is made for Newari festivals. It's traditionally made with water buffalo meat (Buff Choila), but these days any meat or veg (e.g. duck, mushrooms) can be substituted. I made mine with brahman hump, slow cooked for six hours prior to using in the recipe. Was my first time making choila, or cooking brahmam hump ("cupim" in Brazil) so was a bit of an experimental trial. But extremely happy with the end dish.

We have water buffalo, but in large areas of Northern Australia they are considered a feral pest and are culled by professional bounty hunters. They do enormous environmental damage to natural waterways and surrounds. I think the meat is sold by some distributors, but where I live I couldn't source any.

Further to Murphy’s info. There were 2 types of water Buffalo brought in here about 150 years ago. They were abandoned along with the far northern settlements in the 1950’s and by the 1980’s they were in plague - almost 4000,000 of them so they were heavily culled. However there is still an estimated 150,000 of them and there is too much soft hearted bs around introduced species so when the very necessary culling happens the meat & hides most often go to waste.


There is one supplier in Australia doing his level best to make a chain of supply that starts with culling and ends up on the dinner plate and the poor bugger is pushing shit up hill. He’s actually got some customers who are veggo because they hate the industrialized farming industry but are happy to eat his ethically sourced meat.

Ours are 2 different Asian varieties of river buffalo.
 
12th, 13th and 14th April this year is when Thais traditionally celebrate their New Year (Songkhran). This year has been somewhat subdued because of Covid-19 restrictions and I expected the char siu noodle shops to be closed. As we drove past the shuttered shop I noticed that the cook was inside. My wife persuaded her to open early and serve us some noodles.

We have a fair amount of those around here (along with alpacas - everybody’s raising alpacas these days, it seems).
