What did you cook or eat today (April 2022)?

Not made/ate this today, it’s a dish I prepared few days ago: Sardinian Fregula Pasta with Clams (actually Vongole Veraci) and a final sprinkle of grated Bottarga di Muggine (mullet roe)

I almost did not recognize a student of mine at the train station, so lost in my thoughts was I, so no food pics neither...

I managed to surpass from breakfast which was at 7 to lunch, at noon, with roasted amonds and water, and lunch was a Gyros called Olympos, pork, pulled, red cabbage, red onion, fries , some dressing and all rolled into a wrap, which I did not eat, it was good.

Gluten free choc cake, sugarless.

Bananas, 2.

Tea, 3.

Spelt cocoa cookies, 2.

Meat pie, 1 line.

Toast with local salami, 2.

Plenty of water...
 
Ya know, I've never eaten an Arancini, not yet anyways :wink:

And is it served in a marinara?
Ok, this is my first time eating it as well, and I have to say, it was excellent! Also, I don’t really like deep frying, but this is not quite that, so not a mess at all.

This started with the chicken Marbella from two nights ago, which turned into risotto last night, and then arancini (or, as I’m inclined to say around my house, fried rice balls :laugh:), so these were made up of rice, onion, garlic, wine, stock, chicken, olives, prunes, Parmesan, and butter.

I did serve it in a pool of red sauce. I wasn’t sure about that, but I googled “spaghetti with prunes” and saw a lot of recipes that combined prunes with marinara, and it went together wonderfully.
