What did you cook or eat today (April 2023)?

Few too many drinks last night ended in this situation:

Made some pulled beef today. Marinated it overnight in bbq sauce, apple vinegar, honey, BBQ rub and finished it after cooking for round about 6 hours at 110C. Did add salt, more bbq sauce, butter, chocolate powder, agave syrup and teriyaki sauce.
And I've prepared some cookie dough for next week
 
Last night we had chicken noodle soup. This morning I made hubby a breakfast hash of potatoes, jalapeno, red, and yellow bell peppers, onion, and shredded chicken meat with over medium eggs on top. He's eating it right now. We are getting closer to eating at "normal" breakfast hours, since typically we don't eat breakfast until after noon. Well, at least he is eating now, I'll probably stick to my afternoon breakfast :laugh:

Clam and homemade garlic sausage chowder. Started out with salt pork per Legal Seafood's recipe.

Last of the frozen clams in broth and last piece of the sausage. Slowly but surely emptying the freezers.
I'm gonna start a "do you have a food hoarding problem" thread...because I do I think.

I baked another single serving pizza tonight. This one had sauce, herbs garlic powder, mozzarella and rough chopped onions. I should have snapped aquick pic, because it was a pretty good looking pizza. But, I was hungry.

I'm gonna start a "do you have a food hoarding problem" threaf...because i do i think.

I know Craig certainly did before the stroke. He couldn't stand it if the freezers had room in them. I'll buy stuff on sale now, but it's food that I know we'll use up quickly, like chicken, ground meat, shrimp, pork tenderloins, chuck roasts for pot roast or similar.

I bought salt pork for the chowder. I knew we had some that I had divided up and froze from the last time, but had no clue where I had seen it and didn't feel like digging through 3 freezers to find it. Guess what I found the day after I bought it.

Before anybody says to inventory and write down what's in each freezer, we've tried before. It never got kept up. Maybe with just me now mostly, it might. But, I have bad arthritis in my hands and digging around in the freezers makes them hurt horribly. So, I dig a little and come up with a meal or 2 that uses up what's been in there for a while. I keep up pretty good with what I buy on sale now.

Last time we went to the grocery, he went exploring at the bakery while I started shopping. He brought a big long loaf of Italian bread and put in the basket. Asked him what he was going to do with it. "It's for eating." Okay, wasn't sure with what because we were also getting sandwich bread. Told him he needed to do something with it soon because no preservatives and in 1 of those bags that has the micro holes in it. Couple days layer, I tell him he better do something or it's going to get stale and hard, put it in freezer if nothing else. Next morning, it's still in same place. I move it out front and center on counter. It's starting to get hard by this time. Later, I go in kitchen and it's back where it started. Back out front and center it goes, and I say something to him again. Actually told him to throw it away. It disappears. Go to get something out of freezer for dinner next morning and there it is. I just shook my head, got out what I needed and closed the door. I'll throw it out in a couple of weeks.

Made some pasta bologna and a cheese sauce for vegetarian staff.
Again I forgot to take a picture.

Tomorrow we gonna make Tofu and daal for vegans and burger as staff food and I hope I won't forget the picture

I just have the one chest freezer. And I know what's in it, even though it's not very well organized. My food is all labeled and dated though. It's pretty well stocked, but yeah, it's full of a lot of stuff that we will eat within a year (I know some people stick to the 6 month rule with frozen food but I am not one of them). I just love a good sale and can't resist buying certified Angus beef for half the regular price. My inside refrigerator's freezer is full, too. I am sure I am not the only one who keeps vegetable scraps, bones, and/or seafood shells bagged in the freezer to make stock and such with...but they do take up a bit of room!

Sorry about the thread diversion, I know there are other threads touching on those subjects here somewhere.

So last night we had the lamb "lollipops" (I butchered a small Frenched rack of lamb into chops). I marinated them with olive oil, roasted garlic, lime juice, fresh thyme, sage, parsley, and dill with honey and a few drops of soy sauce and liquid smoke. I pan seared them in my cast iron skillet briefly then put them back in the marinade in a glass rectangular pan and let them sit in the 300F oven for a few minutes and flipped them a few times in the marinade before serving. They came out perfectly medium rare and delicious! I served with basmati rice and was going to make asparagus but forgot until the chops were done so didn't bother...I am usually a stickler for serving a vegetable or salad to balance out the protein and starch, but oh well.
