My wife has been given 2 kgs of water chestnuts this evening. What do I do with 2 kgs?
Certainly not a use for 2kgs but, one of my favorite appetizers with water chestnuts:
1. Wrap a strip of bacon around each chestnut, secure with toothpick vertically - toothpick to be used later to pick up the chestnut for eating*
2. Place bacon wrapped chestnuts in a pie dish or other dish with about 1 1/2" depth making sure there is spacing between so as not to touch one another
3. Sprinkle soy sauce over each chestnut
4. Sprinkle brown sugar over top of each soy sauced bacon wrapped chestnut
5. Bake at 350-375 for 15-20 minutes until brown soy topping is bubbly and bacon is sizzling
* I usually take one strip of bacon and cut it in half both length and width so essentially able to wrap 4 chestnuts with one piece of bacon.
Disclaimer: this may have been a copyrighted recipe at some point in time - it was passed from my grandmom to mom to me on hand written recipe cards. Simple stuff but, oh so good!

That's pretty much a variation on rumaki. Some people also add little chicken livers to it as well.Certainly not a use for 2kgs but, one of my favorite appetizers with water chestnuts:

Thinking out loud. Chinese meatballs? Mix ground pork with chopped water chestnuts, scallions, ginger, teriyaki or soy sauce, chopped cilantro or mint. Serve with pineapple fried rice. Play with some ideas with ingredients you like.Stir-frys like moo goo gai pan or add them to Moo shu (pork, chicken, shrimp or beef).
Ordered in & that was dinner. Moo goo gai pan & Moo shu shrimp.
There's a good recipe for moo goo gai pan at dinner at the zoo. You could add them to egg rolls, egg foo yung, Chinese dumplings or many Chinese American dishes. Try Kikkoman.com
