Best advice I can give is to set up your charcoal grill with the coals on one side. A HOT zone, and a not so hot zone. Then, as you cook, you can move the food between zones to control the amount of char, and still cook your food all the way through.

Top tip! It's not a very good unit in fairness. I bought it as a smoker (it has an offset fire chamber) without planning to use it for cooking. There is very little clearance between the charcoal and the food, and no adjustment. Wondering off to check in on here mid way through probably wasn't the best plan either.
 
In Ohio you can drive 20 minutes in almost any direction to find Amish places.
Yup, sometimes even if it's just two or three families.

We've had the uncanny good luck to have always lived within, at most, a couple of hours of some serious Amish settlements. Dover, Delaware has a nice presence, and it's just a hop, skip, and wobble up to Lancaster County, PA from there.

We lived in Minnesota and found a small Amish group in...Chatsworth? Chatfield? Of course, Ohio is Amish Central (not Pennsylvania, as most people think), and then there's the Amish area up around Shipshewana, Indiana...
