A light evening meal last night

White sourdough with avocado and white sourdough with tahini & days syrup. The bread wasn't very high and sliced thinly, hence 4 slices for me, 6 for hubby. He got the crust which he loves.

Asian noodle bowl. Craig wanted cellophane noodles so those are on the bottom. From 12 noon clockwise, Asian pork belly slices, baby bok choy, sautéed shiitaki, roasted red bell strips. Bean sprout salad in the middle. Purchased beef stock doctored up with fresh ginger and garlic, star anise, and a clove, with a tiny bit of sesame oil.

Hubby made our usual Saturday night meal.

Only with a vegan sausage instead of the meatless nuggets. Back on home grown eggs again now. (Actually we're already swimming in them. I'll have to start taking them to the food hub/bank and giving them away.)

Breaded thin-cut chicken breast, lemon orzo, steamed baby spinach. A squirt of lemon for the chicken.

So, evening meal... no surprise that it is also an entry into the current challenge... I've only 3 aubergine left in the fridge now!

Panzanella.. simply stale bread soaked in water and white vinegar then squeezed and crumbled, added onion (I’ve got only the white one and not the red one), cucumber, ripe tomatoes, mint.

Same thing I always do, I google what I'm looking for and click on the 3 top rated recipes of that item and cherry pick in and out what I like. I pretty much just google things and use my imagination.
This is the template I used. I did not use the measurements in the recipe. I made a bunch of them and froze them.
