It's a bit toasty here (17.30 and still 37 oC / 99 F) so just something simple tonight.

Store bought lunch, thin sausage, rosti ( potato) bites.

Love the idea of using a whole apple. Looks like enough for more than a few servings there.
Yes, that was a half-recipe, and still made quite a lot. We’ll be having more tomorrow, MrsT is raving about it.

Besides the mole I found when looking in the freezer, I found a bag of homemade tamales. Roasted poblano, corn, cheese and a little green sauce inside, plus more on top for me. Shredded chicken or pork, neither of us can remember, onions, garlic, cheese, and red sauce, with more red sauce on top for Craig, plus a couple of my green ones.

DH took me to linner after my dermatology appointment ... my favorite Italian/Pizza joint a few towns away.
It's a drive, but so worth every single bite!
Owned and operated by this super nice family from Albania ... DH's family originates from what is now part of Albania, but migrated to Calabria.

Store bought broccoli potato gratin, fresh tomatoes, vegan feta. Don't look like writing home about, but were good!
