Odd, it is just the opposite with catfish in the US. The farmed catfish is much cleaner tasting.

Probably should have clarified I prefer wild barramundi that's caught in saltwater. Barramundi are catadromous, can live in salt or fresh water....so I guess a wild one caught in a muddy fresh water creek would have that muddy taste too. Anyway, I shouldn't talk about something I rarely eat anyway.
 
I made my holiday fudge again, just this time with peppermint essence, dried raspberry and crushed candy canes instead of strawberries.

It took me half a lifetime to figure it out but I prefer saltwater fish. Period.

The exception is fresh water fish that is caught & cooked immediately. The only way is to be camping & fishing. One of my most memorable fish meals was a breakfast of Murray Cod at our family campsite just out of Rutherglen.
